About the Author
Dr. James DiNicolantonio is a Doctor of Pharmacy and a cardiovascular research scientist. A well-respected and internationally known scientist and an expert on health and nutrition, he has contributed extensively to health policy. He serves as the associate editor of the British Medical Journal's Open Heart, a journal published in partnership with the British Cardiovascular Society, and is on the editorial advisory boards of several other medical journals. Dr. DiNicolantonio is the author or coauthor of over 300 publications in the medical literature. He also is the author of nine best-selling health books: The Salt Fix, Superfuel, The Longevity Solution, The Immunity Fix, The Mineral Fix, WIN, The Obesity Fix, The Collagen Cure, and The Blood Sugar Fix. Over the last 20 years, Williams has left her mark on highly regarded Manhattan restaurants including The City Bakery, Home Restaurant, Isla, and Olives. Her passion for culinary nutrition surfaced after she gave birth to her first child. She returned to school to secure her Holistic Nutrition Certification and coupled that with a Food Therapy Certification from holistic health pioneer Annemarie Colbin at the Natural Gourmet Institute. She does a lot of consulting work, including product and menu development for different health food brands. One of her favorite projects to date was working on Hu Kitchen's menu before it opened.
Williams believes that what we eat affects our physical, emotional, and mental well-being. Her philosophy is "no gluten, no dairy, no sugar, no problems." Her recipes can be found in Dr. David Perlmutter's book Drop Acid, in Dr. Frank Lipman's book 10 Reasons You Get Old and Feel Fat, at Bon Appetit online, and on Yahoo Health in her "Junk Food Makeover" column.
