About the Author
Alicia Gironella is the director and partner of the El Tajín restaurant. Her fervent interest in preserving and promoting Mexican gastronomy led her to create the Institute of Gastronomic Culture in 1980 and to found in 1989 the first Diploma for Chefs at the Ibero-American University.
